V8 Spanish-Style Rice

- 1 tablespoon vegetable oil
- 1 cup uncooked long-grain white rice
- 4 cups v 8 juice (regular or low-sodium)
- 1 teaspoon dried basil leaves, crushed
- 1⁄4 teaspoon garlic powder
- 2 cups mixed vegetables, frozen
directions
- Heat the oil in a 10-inch skillet over medium heat., Add the rice and cook for 30 seconds. Stirring constantly.
- Stir the vegetable juice, basil and garlic powder in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes.
- Stir in the vegetables. Cover and cook for 10 minutes or until the rice and veggies are tender.

My family wasn't too keen on the idea of the frozen mixed vegetables in this. So, I grilled a couple ears of corn and cut the kernels off when it was done. I also diced up a fresh jalapeño pepper and sliced a couple of green onions. I just added them in place of the frozen mixed veggies. I used three cans of v8 that I had in the fridge. Wouldn't change a thing. Turned out fantastic!

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
