Tzatziki Sauce

"My Family loves Greek food. We are nowhere NEAR being greek, nor claim to be. however we can make some good greek food. Here is a side sauce served with Gyros, Pita bread, Dolmades etc... Enjoy!"

  • Place yogurt in a strainer lined with Cheese cloth. Put Strainer in a bowl with enough room for liquid to drip down. Place in refrigerator for at least 4 hours (Over night works best) Empty bowl every few hours.
  • Place chopped cucumber in another cheese cloth and squeeze to remove liquid, discard liquid.
  • In mixing bowl combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar and mint. Mix well.
  • Store in the refrigerator in an airtight container for up to a week.
  • Serve with warm Pita bread.
  • ** May need more vinegar, garlic and oil, depending on taste.

Right now I work as a dialysis Tech during the day and a chef for my small family of three during the night. My wife doesn't prefer to cook which is OK because I DO!!! I love finding new things to try.
