- 1⁄2 cup caster sugar
- 1⁄2 cup water
- 1⁄2 cup coconut cream
- 3⁄4 cup orange juice
- 3⁄4 cup pineapple juice
- 1⁄4 cup lemon juice
directions
- Combine water and sugar in a saucepan and stir over low heat to dissolve.
- Bring to boil, stirring, for ten seconds. Remove from heat.
- Add coconut cream and juices and stir well.
- Allow to cool completely, stirring from time to time to recombine coconut cream.
- When cooled completely, pour into moulds and insert sticks. Freeze until solid.
