Tropical Icy Poles (Popsicles or Ice Lollies)

"Simple to make - substitute juice to suit whatever fruit juice is available. The combination listed below tastes just like Frosty Fruits. If you don't have icy pole/popsicle moulds, freeze in a shallow metal dish then break up with a fork and serve as a granita. NOTE: Cooking time includes freezing time, and will vary."

  • Combine water and sugar in a saucepan and stir over low heat to dissolve.
  • Bring to boil, stirring, for ten seconds. Remove from heat.
  • Add coconut cream and juices and stir well.
  • Allow to cool completely, stirring from time to time to recombine coconut cream.
  • When cooled completely, pour into moulds and insert sticks. Freeze until solid.
