- 16 ounces frozen corn
- 2 tablespoons butter
- 1 tablespoon bacon grease
- 1 tablespoon sugar
- 1 teaspoon seasoning salt
- 1⁄2 teaspoon pepper
- 1⁄4 cup whipping cream
directions
- In a skillet on medium high heat, melt the butter and bacon grease.
- Add the corn and sugar and saute until golden, about 10 minutes.
- Season with seasoning salt and pepper.
- At the last minute stir in the whipping cream and simmer 2 minutes on low. Do not allow to boil.

When making this recipe I did make a significant change, perhaps, in that I left out the bacon grease but included a rounded tablespoon of bacon bits! I liked the flavor the bacon added, but it wasn't what was originally intended, I'm sure! Still the finished corn dish was very well received at the table, so . . . [Made & reviewed for one of my adopted chefs in the current Pick A Chef event]

My boyfriend and I both agreed that this corn was downright amazing. Perfect seasonings, and such a wonderfully complex, salty-sweet flavor. I'm sorry I didn't make a double recipe even though it was just the two of us (we might have had some leftovers - maybe not, though)! Oh, and I used canned corn in this instead of frozen; worked perfectly. Very excited to have a new go-to recipe when we're in the mood for corn! Made for Pick a Chef, Spring 2011.
