Totally Unhealthy Skillet Corn

"Came up with this on a whim tonight for dinner. It turned out great. My 7 year old almost ate the whole bowl! I used frozen shoepeg corn, but fresh would be even better."

  • In a skillet on medium high heat, melt the butter and bacon grease.
  • Add the corn and sugar and saute until golden, about 10 minutes.
  • Season with seasoning salt and pepper.
  • At the last minute stir in the whipping cream and simmer 2 minutes on low. Do not allow to boil.

  1. When making this recipe I did make a significant change, perhaps, in that I left out the bacon grease but included a rounded tablespoon of bacon bits! I liked the flavor the bacon added, but it wasn't what was originally intended, I'm sure! Still the finished corn dish was very well received at the table, so . . . [Made & reviewed for one of my adopted chefs in the current Pick A Chef event]
     
  2. My boyfriend and I both agreed that this corn was downright amazing. Perfect seasonings, and such a wonderfully complex, salty-sweet flavor. I'm sorry I didn't make a double recipe even though it was just the two of us (we might have had some leftovers - maybe not, though)! Oh, and I used canned corn in this instead of frozen; worked perfectly. Very excited to have a new go-to recipe when we're in the mood for corn! Made for Pick a Chef, Spring 2011.
     
  3. I really enjoyed this. The title is apt, as it's totally unhealthy, but really tasty. I did use half and half, and just drizzled some over the corn and simmered. I'll make this again! Thanks for a great recipe. Used the sweet frozen corn from Costco and it turned out just fine.
