- 8 tomatoes, cored and cut into chunks
- 2 large garlic cloves, smashed and finely chopped
- 14.79 ml fresh cilantro, chopped
- 118.29 ml celery, chopped
- 59.14 ml scallions, chopped or 59.14 ml green onion
- 4.92 ml fresh oregano
- 4.92 ml fresh basil, freshly chopped
- 44.37 ml extra virgin olive oil
- 29.58 ml balsamic vinegar or 29.58 ml balsamic glaze
- salt & pepper
directions
- You can substitute fresh basil & oregano with a 1/2 teaspoon dried.
- Place the tomatoes & chopped veggies in a large bowl. Add the olive oil, vinegar, garlic, and herbs (if using). Toss well.
- Transfer to a serving dish and finish with freshly ground black pepper & salt to taste.
