  • Preheat oven to 400°.
  • In a small bowl, mix the spinach, 1/2 C cheddar cheese, 1/4 C bread crumbs, egg, onions and garlic powder.
  • Spread the mixture into the bottom of a 9-inch square or 7x11-inch baking dish.
  • Arrange the tilapia on top of the spinach and season with tarragon, parsley, salt and pepper.
  • Top with the remaining cheddar cheese and bread crumbs.
  • Cover and bake 15-20 minutes, or until fish flakes easily with a fork.

  1. Very good recipe. The only thing I changes was using reduced fat sharp cheddar. Turned out great for such a quick recipe. A bit of lemon when serving might add a little (I was out). This will be a 'go to' recipe.

  5. We eat LOTS of tilapia, and I have tried many differnt ways -- usual preference is sauteed in butter with Panko breading, and lots of lemon juice. I had some thawed frozen spinach from another recipe, and thought this could be new and different. Sorry --the flavors completely obliterated the delicate taste of the fish, so won't be trying again. Glad others enjoyed it.

I am a Christian wife and mother of 3 kids. Since my DH's high cholesterol, we've been eating better. I never used to like cooking. Since eating better, I've liked learning and preparing new recipes. My kids haven't reconciled themselves to the new eating yet. I grind my own grain and make all my own breads.?Working 2 hours a day in the local high school lunch room.??I am homeschooling my high schooler.? ?Also found out 1 child has multiple food allergies (wheat, dairy, tomato, chocolate, etc) and another is gluten sensitive. So, we just started (July 09) eating gluten and dairy free. I've been busy with getting our house market ready, even though it's not the best time for that.?
