  • On high heat sautee onions until just turning brown in a dutch oven or heavy pot.
  • Add and brown the meat.
  • Throw in the chilis and garlic and cook over medium heat for a few minutes.
  • Add crushed tomatoes and all the spices bring to a simmer.
  • Simmer for several hours, or until the beef begins to fall apart.
  • 30 minutes before serving add beans.
  • Sprinkle with cheese and serve with a warm flour tortilla or sprinkle with crushed corn chips.
  • If your chili is too spicy add a dollop of sour cream.
