  • Slice peppers in half lengthwise.
  • remove seeds and membrane, or leave some in for more heat. A spoon works well.
  • slice block of cream cheese in half lengthwise, slice into pats. Form each pat into a football and place inside pepper half. This method works better than smearing IMO.
  • cut package of bacon in half, wrap each popper with 1/2 piece of bacon.
  • grill over indirect heat, direct heat they will burn easily. These can also go in the oven, 325 about an hour.
  • the last few minutes of cooking brush with your favorite sweet barbecue sauce (optional).
  • I like the pepper to cook down also, not crunchy green.
  • Seems the longer they cook the better they are, especially when cooking low and slow.
  • 1 hour cook time typical.
  • SOOO WORTH THE WAIT!
