- 1 lb chicken (cut into 1 inch strips)
- 8 ounces linguine
- 1 tablespoon olive oil
- 1 cup chicken broth
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1⁄4 cup crunchy peanut butter
- 1 teaspoon cornstarch
- 1 teaspoon ground ginger
- 4 green onions (sliced)
- 2 garlic cloves (minced)
- 1 red pepper (cut into strips)
directions
- In a sauce pan, saute chicken in olive oil. Cook linguini according to package.
- Remove chicken from pan and add broth, honey, and soy sauce.
- Whisk in the peanut butter, cornstarch, and ginger.
- Add onions and garlic, stirring constantly over low heat until blended.
- Add the pepper and cooked chicken, cook until the sauce has thickened.
- Serve over warm linguini.
