Thai Chicken Fettuccine, Southwest Style

ingredients
- 1 cup chunky salsa (mild to hot as desired)
- 1⁄4 cup creamy peanut butter
- 2 tablespoons orange juice
- 2 tablespoons honey
- 1 teaspoon soy sauce
- 1⁄8 teaspoon red pepper flakes
- 8 ounces fettuccine pasta
- 1 lb boneless skinless chicken breast, cut into strips
- 1 tablespoon olive oil
- 1 sweet red pepper, julienned
- 1⁄4 cup cilantro, minced
- salt
directions
- In saucepan or microwave, combine salsa, peanut butter, orange juice, honey, soy sauce and red pepper flakes. Heat until well blended.
- In a large skillet, cook chicken in oil over medium heat for 3-5 minutes until browned. Add julienned red pepper and cook and stir until crisp-tender.
- Cook fettuccine according to package directions and fold into chicken mixture. Stir in sauce, salt to taste and sprinkle with cilantro.
- Wonderful with spiced fruit salad.

This recipe is our absolute favorite. We' shared it with tons of friends and everyone is making it at their houses now too!! We double the sauce (its too good not to) and just a note.... don't let the sauce sit for too long on the stove as it gets too thick and doesn't coat as well once you combine it with the past. Otherwise, its fantastic! Great zip, great flavor, a real crowd pleaser. THANKS FOR SHARING!

Totally awesome flavors in this incredible dish! My whole family loved it! I have six very picky eaters in my husband and kids, so when I decided to make this dish I was a little wary, but it turned out fabulous! Basically, I tripled the sauce and used 9 chicken legs that I boiled, then skinned and boned to get the meat. This meant I didn't need to use the olive oil and the meat was full of flavor and very moist. We don't like white meat. ;) Didn't have orange juice, so I used lemonade. Made no difference that I could tell. I also added a bit of the chicken broth from the boiled chicken legs, just in case, and it worked great. I made my own homemade salsa from my garden tomatoes, jalapenos and onions, then added store bought cilantro, lime juice and salt. I used three cups of this homemade salsa to add to the peanut butter sauce. I heated the peanut butter with everything but the salsa, and then added the salsa last so it wouldn't cook. It tasted so fresh doing it this way. Then I added the chicken to the peanut butter/salsa sauce and poured the whole pot over cooked linguine because I didn't have fettuccine noodles. Nope, didn't have a red bell pepper either, so I left that out too, and turns out it didn't need it. Even with all the changes I made to this versatile recipe this meal was fantastic! I will be making this dish a part of our main fare. My dh and kids said we should make this for company it was such a special dish. Thank you Mareesme for sharing the recipe! It rocked!

This is such a fabulous dish! All of the flavors seem "pop" in your mouth as you eat this in that you can taste the hint of orange, the peanut butter and the spice from the salsa. I made a couple of small change. I did add more salsa as Mareesme suggested but I used my own #239651 Sooz's Easy Homemade Blended Salsa recipe as I have people in the house who do not like "chunks" in their food. I also used pre-cooked shredded chicken which made this recipe not only super delicious, but really easy to make for a quick weeknight meal.

I've loved Zaar for many years and the great recipes I've found here. Back when I was working and the kids were little I was an okay cook who excelled only at a few family recipes. I began "surfing" on Zaar and started making so many wonderful fast and easy recipes. As they got older and I had more time, I began making more adventurous meals. Zaar's fabulous cooks have helped me every step of the way. Thanks to the Zaar family of cooks and the enthusiasm for cooking I developed through them, I'm now considered a good cook and develop many of my own recipes.
When the kids were grown and I was no longer working, what started as a place to find new recipes turned into a community made up of varied and interesting people. After years as a "recipe surfer", I became a premium member in 2005 not only to start organizing recipes but also to participate even more in discussions, forum activities and having fun with new friends.
I am hoping you enjoy the recipes I have posted and welcome comments. I try to thank everyone who reviews one of them, but if I "drop the ball" or if you can't receive Zmail, please know how much I appreciate you taking the time to make one of my recipes.

I've had vision problems plus a retina disease called retinopathy prematuria since birth, but never let it stop me until the last few years when I had to quit driving becauser of it. I moved from "sweet home Chicago" to rural San Diego County, CA, in 2004 when my husband of 35 years retired. Sadly, we are not near our children and beautiful grandchildren, who live in Florida, Minnesota and Arizona. Zaar has helped the transition from moving from the city to the country and becoming an empty nester confined to home a little more bearable.
I still love to read my grisly crime novels, play on the computer, and play blackjack at local casinos (within reason, of course??)
Even though my old friends tease that I'm a cross between a dirty old lady and a mother hen, Zaarites seem to bear with me. I think I love going to restaurants more because of reading the menus than eating the food. My best-friend says when I die I'm going to go to the big menu in the sky!
