- 8 chicken breasts (thin sliced)
- 1⁄2 cup Italian seasoned breadcrumbs
- 1⁄2 cup parmesan cheese, grated
- 1 1⁄2 teaspoons oregano
- 1⁄2 teaspoon garlic powder
- 1⁄4 teaspoon pepper
- 1 tablespoon parsley, chopped
- 4 ounces monterey jack cheese, shredded
- 5 tablespoons butter, melted
directions
- Combine crumbs, parmesean, oregano, garlic, and pepper in a bowl.
- Sprinkle each thin-sliced breast with cheese; roll-secure with tooth picks.
- Melt remaining butter; roll chicken in butter and then dip in bread crumb mixture to cover. Lay in sprayed glass baking dish, drizzle prepared chicken with extra melted butter.
- Refridgerate for four hours.
- Bake at 425 degrees for 20-25 minutes.
