Tangy Cheese-Topped Spuds (With Horseradish)

"I found this on another web site... it has a very unique flavour with the horseradish but we enjoyed it thoroughly. Also submitting this recipe to test the Zaar category database system."

  • Preheat toaster oven to 300°F.
  • Cook potatoes in microwave oven till done.
  • Meanwhile, in mini-mixer, blend cream cheese & sour cream until smooth & pour into a bowl. Add onion, horseradish, lemon juice, parsley & salt to bowl & mix well.
  • With a sharp knife, cut an X in the top of each potato & scoop out pulp with a spoon. Add to topping mixture with grated cheese & blend well.
  • Scoop mixture back into potato jackets & top with abit more grated cheese.
  • Cook in toaster oven for 10 - 15 minute
  • Broil 5 min to melt cheese on top of potatoe.
