Tangy Cheese-Topped Spuds (With Horseradish)

- 3 ounces cream cheese, softened
- 1⁄3 cup sour cream
- 1⁄4 cup green onion, finely chopped
- 2 1⁄2 teaspoons prepared horseradish
- 1 teaspoon lemon juice
- 1 teaspoon parsley (or 1 Tbsp fresh)
- 1⁄8 teaspoon salt
- 2 ounces shredded cheddar cheese
- 4 potatoes
directions
- Preheat toaster oven to 300°F.
- Cook potatoes in microwave oven till done.
- Meanwhile, in mini-mixer, blend cream cheese & sour cream until smooth & pour into a bowl. Add onion, horseradish, lemon juice, parsley & salt to bowl & mix well.
- With a sharp knife, cut an X in the top of each potato & scoop out pulp with a spoon. Add to topping mixture with grated cheese & blend well.
- Scoop mixture back into potato jackets & top with abit more grated cheese.
- Cook in toaster oven for 10 - 15 minute
- Broil 5 min to melt cheese on top of potatoe.
