  • Heat olive oil in large skillet over medium-high heat.
  • Saute onion, garlic, and red pepper 3-5 minute or until soft.
  • Add ground beef and cook until browned.
  • Drain off any excess fat.
  • Add spices and tomatoes and cook 5 minute.
  • Stir in cooked macaroni, cheese, and evaporated skim milk.
  • cover and simmer 5 minute or until cheese melts.

  1. This was a quick, easy, yummy recipe! Just the way I like them!! I think to make it even easier and a bit more flavorful, next time I'll used packaged taco seasoning instead of the chili powder, cumin, etc. I'll probably add a bit of sour cream and some shredded lettuce to the top of each serving as well just to make it more taco-y! Thanks for a great recipe! I know we'll be eating this often!

  3. This is so easy and quick to put together and the flavors are outstanding. I only used about 10-12 oz of the elbow macaroni and that seemed to be plenty. Added some crushed red pepper flakes to spice it up a little and used Rotel tomatoes for the diced tomatoes. Made a nice combination. Thanks for sharing.
     
  4. I made this for our lunch today and I am sitting here eating it as I type this :) This was very easy to put together and tastes great. I think that next time I will add some salsa or chilies just to make it a little more spicy. I also found that I only needed 1/2 of a box of elbows. This is great recipe for those nights or days you need dinner on the table fast. Thanks for posting!!!

I live in Indiana and work at Hooters. My mom is Lauralie41 and I enjoy going home and looking at recipes with her, Zaar is my favorite cookbook. My son is seven months old and I cant imagine what it was like without him. He is a very happy, smart little boy and loves going to grandma and grandpas. I think he is going to be pretty spoiled!
