    I have not tried this recipe. I got it from 1st Traveler's Choice Internet Cookbook. Pomegranate House Bed and Breakfast Granbury, Texas Specialty Recipe. These are beautiful pink cookies that have become very popular with our guests and are served daily at our B&B.

    Directions:

      Preheat oven to 350 degrees. Cream margarine and sugar. Add eggs one at a time, mixing after each addition. Add almond extract, flour, baking powder, cream of tartar, and salt. Add a few drops of red food coloring to the dough and swirl through mixture. Do not over mix. Chill dough thoroughly.

      Roll chilled dough into balls and place on greased cookie sheet. Flatten balls slightly. Bake for exactly 10 minutes. While cookies are baking, mix together the glaze ingredients. Glaze cookies while warm.

      This recipe was originated in Lake Jackson Texas, by Sandy's Sweets about 20+ years ago. It is an awesome recipe and my nieces and nephews always ask me to make this recipe for special occassions. These cookies should come out puffy and swirled with the coloring, icing should be bright pink and creamy. This recipe is EXACT to the one that I have had for over 20 years. ENJOY!!

      This recipe made 174 pretty pink cookies when rolling 1 teaspoon balls. They are mildly crispy on the edges & just barely browning on the bottom when cooked for 10 minutes at 350 on middle rack (lower rack browner in my gas stove). They cool a bit crisper (good for us as we are mailing them out). These cookies taste better cooled & I expect them to be better still in the am. edit - they were better last night unfortunately. Will be trying them as sandwich cookies using a maraschino cherry frosting. Thanks for the recipe to brighten our holiday cookie trays, Internetnut.
