Sweet Potato Chips

"After reading about mushy baked sweet potato fries, I had to throw this on here. It may not be as healthy as baking them, but so good! I try to slice them very thin to make them crispy like potato chips. They will become a darker brown, but my kids always pick these out first. If they are slightly thick, you still get a crisp edge , but the middle will be soft. I Like to slice up some yellow or blue potatoes with it too for variety and color."

  • olive oil (for skillet or fryer) or vegetable oil (for skillet or fryer)
  • 1 -2 large sweet potato, sliced into very thin medallions
  • salt and pepper
  • bleu cheese salad dressing, for dipping

directions

  • Slice sweet potatoes.
  • Heat oil to about 350°F.
  • Cook in batches, about 4-5 minute first side, flip, cook 1-2 minutes more until golden brown- orange.
  • Place on paper towels to drain off excess oil.
  • Salt and pepper to taste each batch.
  • Serve with Bleu cheese dressing for dipping!

Stay-at-home Mom of three. We homeschool here on the farm. I do lots of cooking! I enjoy it sometimes, though sometimes it gets to be too much...and I got to look up a quikie on here. Children's ages are 9,7, and 4 and we have cooking class where they all participate. I have lots of recipe sights in My Favorites, but this one is the only one I ever use.
