This comes from America the Majestic Cookbook and is actually avocado added to vanilla ice cream so is easy peasy! Cook time is freezing time.


  1. Peel, pit and mash the avocados. In a blender or food processor, blend in the lime juice, sugar and ice cream. Beat well. Store in the freezer.
  2. To serve, scoop into glass serving dishes and top with fresh chopped mint. Enjoy!

I served this at Thanksgiving with sliced bananas and chocolate sauce.
Although it was met with an initial skepticism, it was a hit.
I found I wanted a bit more lime bite to it so next time I will increase the lime juice.
I may also add chocolate chips to the mix.
I lined a cupcake pan with foil cupcake liners and froze it into individual servings.
These were then easy to place in a dessert dish and looked pretty to boot!
