This comes from America the Majestic Cookbook and is actually avocado added to vanilla ice cream so is easy peasy! Cook time is freezing time.
- Peel, pit and mash the avocados. In a blender or food processor, blend in the lime juice, sugar and ice cream. Beat well. Store in the freezer.
- To serve, scoop into glass serving dishes and top with fresh chopped mint. Enjoy!
I served this at Thanksgiving with sliced bananas and chocolate sauce.
Although it was met with an initial skepticism, it was a hit.
I found I wanted a bit more lime bite to it so next time I will increase the lime juice.
I may also add chocolate chips to the mix.
I lined a cupcake pan with foil cupcake liners and froze it into individual servings.
These were then easy to place in a dessert dish and looked pretty to boot!
