I subbed curry powder for thai red curry paste since I had it in my fridge. I served it over a bed of cauliflower rice for a well rounded healthy dinner. Turned out great, would definitely make again! Might try adding a little corn starch slurry to make for an extra thick sauce!
- 4 boneless skinless chicken breasts, cut in bite sized pieces
- 3 red bell peppers, chopped
- 2 onions, chopped
- 2 garlic cloves, minced
- 1 (16 ounce) can unsweetened pineapple, not drained
- 1 tablespoon curry powder
- salt and pepper
