Surprise Meringue Kisses

"The surprise is the milk chocolate center. a cookie made by covering the candy kiss in a stiff meringue flavored with vanilla and peppermint extract if desired. Comes from my Better Homes and Gardens recipe card collection. I have not made these yet, prep time is a guess."

  • In a small mixing bowl beat egg whites with vanilla, cream of tartar and peppermint extract if using.
  • Add salt till soft peaks form (tips curl over).
  • Gradually add the sugar, 1 tablespoon at a time.
  • Beat until very stiff peaks form (tips stand straight up).
  • Drop from a Tablespoon onto lightly greased cookie sheet. Leaving 11/2 inches apart.
  • Press a kiss into each cookie.
  • With a knife or narrow spatula bring meringue up and over the kiss.
  • swirl top.
  • sprinkle with green sugar.
  • Bake at 275 for 30 minutes or until set.
  • Immediately remove cookies to rack.
  • cool.
  • Enjoy.
  • You can vary this by trying other flavored kisses as well.
