Superfood Salad With Moroccan Dressing

- 4 small beetroots, raw
- 14.79 ml olive oil
- 3 medium carrots, peeled and cut into small sticks
- 198.44 g broccoli, cut into small florets
- 198.44 g couscous
- 29.58 ml pumpkin seeds, toasted

MOROCCAN DRESSING
- 88.74 ml extra virgin olive oil
- 44.37 ml red wine vinegar
- 4.92 ml sweet paprika
- 2.46 ml ground cumin
- 1 garlic clove, finely chopped
- 1 bunch flat leaf parsley, chopped, save some leaves for decoration
directions
- Heat the oven to 350 degrees.
- Toss the beetroot with 1 tbsp olive oil and season.
- Roast for 30 minutes or until tender.
- Cool, then peel and cut into cubes.
- Steam the carrots and broccoli until just tender, about 4 minutes, then refresh in very cold water and drain.
- Put the couscous in a large bowl and pour over 5 fluid ounces boiling water.
- Cover for 10 minutes then fluff up with a fork.
- Whisk together the dressing ingredients and season.
- Put the couscous into a serving dish, sit the vegetables on top and pour over the dressing.
- Sprinkle with pumpkin seeds and parsley and serve.

I am originally from the Philadelphia area of the United States but have been living in London, UK since 1996. I now have dual American and British citizenship. I became a widow at the age of 27 in 2004 but have managed to fall in love again and was married again on July 19, 2008.

If I make one of your vegetarian recipes and I managed to take a good photo of it, chances are I will blog about it and tell everybody how much I enjoyed it.
