"I tried to make this as healthy as possible. You might want to add cheese or a vinagarette. You also may prefer not to cook the spinach. If so, just use less because it shrinks when cooked."

  • Dice the tomato.
  • Boil the Rotini. While the Rotini is boiling.
  • Boil Peas, Lima Beans, and Tomato.
  • Put Spinach in a separate pan on high heat until wilted.
  • Drain the Rotini and Vegetables.
  • Combine and Enjoy!

Well, I love to cook. I eat really healthy, but I eat enormous amounts. It's almost an obsession. I'm also a competitive swimmer, so I have to eat lots of carbs and find ways to get protein without a lot of meat (tofu recipes, anyone?). I'm also a really slow cook. And kind of a blonde in the kitchen. I can make a delicious tofu curry, but somehow I always forget to add water to Ramen noodles . . .
