ingredients
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 453.59 g smoked sausage, chopped (1 sausage ring)
- 118.29 ml butter
- 118.29 ml flour
- 141.74 g can evaporated milk
- 3-4 potatoes, diced
- 2 (793.78 g) can whole kernel corn
- 1892.72 ml water
- 73.94 ml olive oil
directions
- Put olive oil in large pot ( just cover bottom of pot-it doesnt take much and the olive oil gives it a nice flavor) .
- Saute onion and green bell pepper.
- Add water , potatos, corn (juice too) and sausage. Cook until potatos are soft.
- In seperate bowl melt butter with flour to make your roux.(I do it in the microwave for about 1 minute).
- Add roux and evaporated milk and seasonings. Simmer until thickened.

I am a wife and stay at home mom of my 3 yr old and 20 month old daugters. I Never really liked to cook but my husband was tired of the same ole' same ole' that I was making for dinner.
