Citrusy steel cut oatmeal
- 1⁄2 cup water
- 1⁄2 cup orange juice
- 1⁄2 cup steel cut oats
- 5 dried apricot halves, chopped
- 4 pieces pineapple, chopped
- 3 tablespoons low-fat vanilla yogurt
- 1 teaspoon cinnamon
- Bring the water and juice to a boil.
- While it's heating add the cut up apricot and pineapple.
- After it's boiling add the oats and stir until it thickens. Serve immediately, with the yogurt and cinnamon on top.
