Sunny Orange Pancakes

- 7 tablespoons sugar, divided
- 1 1⁄2 teaspoons cornstarch
- 1 1⁄2 cups orange juice, divided
- 2 cups biscuit mix
- 2 eggs
- 3⁄4 cup milk
directions
- In saucepan,mix 4 T sugar, cornstarch, and 3/4 cup orange juice.
- Stir until smooth.
- Bring to a boil.
- Cook and stir for 2 minutes.
- Remove from heat; cool to lukewarm.
- Mix biscuit mix and remaining sugar.
- Beat eggs, milk, and remaining orange juice; stir into dry ingredients just until moistened.
- Pour batter on lightly greased hot griddle.
- Cook on both sides until golden brown.

These have wonderful flavor, but really odd texture. More like a crepe then a pancake, and too chewy for my taste. Also, nowhere in the directions does it say when to add the boiled mixture. I added it directly to the egg and juice mixture. I used 2 egg whites in the place of each egg, and light soy milk for the milk. Neat to try, though. Thanks!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
