Sugarless Apple Cookies

  • In a large saucepan, combine dates, apple, raisins and water.
  • Bring to a boil; reduce heat and simmer for 3 minutes.
  • Remove from heat and cool.
  • Combine flour, cinnamon and baking soda.
  • Stir into apple mixture and mix well.
  • Combine eggs and sweetener; add to batter and mix well.
  • Drop by tablespoonfuls onto a nonstick baking sheet.
  • Bake at 350 degrees for 10 minutes.

I made a handful of substitutions inspired by my morning oatmeal:<br/><br/>Started at step 4: <br/>1 c of gala apples<br/>1/3 c of pecans (in lieu of dates & raisins)<br/>1/2 c apple butter<br/>& clove honey for my sweetener<br/><br/>They're really tasty!   4. Good recipe. I am always looking for healthier ways to "trick" my kids into thinking they are eating junk food. I liked these cookies because of their lack of sugar and because they were easy to make too! Oh yeah...did I mention that they taste pretty good too? Thanks Sarah J.
     
  5. Very good. I used the following substitutions to make them 1/2 ww point each & even healthier. They turned out very nice: Whole wheat flour instead of white flour, I replaced some of the flour with 8 grain cereal mix-abt 1/4 cup(optional). 1 tsp powdered stevia instead of liquid sweetener mixed into 1/2 cup egg substitute instead of 2 eggs. I replaced the dates with more apples and I added 1/4 tsp baking powder to the recipe. I made 30 small cookies (teaspoon of batter)& they come out to be 1/2 ww point each.

I'm in 4-H and I help raise money every year for the Juvenile Diabetes Research Foundation. I was diagnosed with juvenile diabetes 2 days before my 6th birthday.
