This is from the book "My Party" by Pete Evans. Use this syrup in your White Chocolate Martini ( White Chocolate Martini - Pete Evans ). .
- Place the water and sugar in a small saucepan over low heat and stir until the sugar has dissolved.
- Increase the heat and simmer until the liquid is clear.
- Remove from the heat, set aside to cool, then bottle.
- Date your bottle and refrigerate until use.
I reduced this to just 1/4 cup syrup using brown sugar. After cooling to room temperature, I added it to some rum and seltzer, and we enjoyed a wonderful drink. Very nice, thanks for sharing the recipe. I had never thought to use brown sugar.
