  • Preheat oven to 400 degrees. In a medium bowl, stir together pancake mix, water, sugar, vegetable oil, egg and nutmeg until just blended. Spoon batter into a lightly greased, or paper lined, 12 cup muffin pan, filling 2/3 full. Bake for 12-14 minutes, or until a toothpick inserted in center comes out clean. To prepare the topping, melt butter and set aside. In a small bowl, stir together sugar and cinnamon. While muffins are still warm from the oven, dip into melted butter and then into the cinnamon sugar mixture.

  1. Yummy...just a little on the dry side but nothing that a cup of cold milk or warm coffee can't wash down! We had just moved and I did not have flour but had pancake mix. I added a teaspoon of vanilla and extra half tsp. of nutmeg. My family loved it...especially my DD (10) and DS (8). I did not have my muffin pans unpacked so baked in a round cake pan.
