Made this for a dinner party. Was great with home-made rolls. The recipe was simple, but I had difficulty with getting the strawberrys and the butter to mix well. Bit of a clumpy appearance. My solution, heat for about a minute in microwave and wisked. At this point, it is pretty much melted. After wisking, put in refrig for a few minutes, then wisk again. As the butter cools and is wisked, it forms a nice, solid, well mixed butter that is delightful.
- 1 pint fresh strawberries or 10 ounces frozen strawberries, thawed and drained
- 1⁄2 lb butter, softened
- 1 cup confectioners' sugar (1/2 cp. is using frozen berries)
