  • 1 lb large ripe strawberry, rinsed and patted dry
  • 8 ounces strained Greek yogurt (or regular yogurt strained in a cheesecloth- lined strainer overnight in refrigerator)
  • 1 12 tablespoons honey (or more)
  • 12 vanilla bean, seeds scraped from pod
  • 12 teaspoon vanilla extract
  • 18 teaspoon almond extract
  • lightly toasted sliced almonds, for garnish (optional)

  • Using a paring knife, cut the tops off of the strawberries. Using the tip of the knife, cut a wedge-shaped well in the top of the strawberries.
  • In a small bowl combine the yogurt, honey, vanilla bean seeds, vanilla and almond extracts and stir until completely combined. Taste and adjust the sweetness by adding more honey if necessary.
  • Using a small spoon or piping bag, fill the wells in the strawberries with some of the yogurt mixture. Top with a few of the sliced almonds and serve.

  1. Unlike everyone else, I made this for breakfast, I replaced the vanilla beans with vanilla extract, still it worked out real well.Really enjoyed this morning treat. Made for PRMR tag.
     
  2. What a wonderful summer dessert! I did not have vanilla beans, so had to use pure vanilla extract and they were still awesome. Thanks for posting Swissms.
     
  3. Excellent! So much better than whipped cream. Lots of flavor, a little tang/zip. Especially great if you have really fresh juicy red berries! Perfect spring dessert. I did not toast my almonds and it was fine.
     
  4. The vanilla bean and honey give the Greek yogurt a great flavor, and it pairs very well with the strawberries. I might leave the vanilla extract out next time so the yummy flavor of the vanilla bean can shine through even more.
