Sticky Lemon Chicken

"I must admit I haven't tried this, but it's from the latest BBC Good Food magazine and looked too good not to share."

  • Start by pre-heating your oven grill to high and greasing a baking dish.
  • Put the chicken in the dish, skin side down, and sprinkle over a little salt and pepper.
  • Grill for five minutes.
  • Meanwhile, cut four thin slices from the lemon.
  • Take the chicken out of the oven and turn over.
  • Lay one lemon slice on each breast.
  • Sprinkle over the thyme and little more salt and pepper.
  • Drizzle over the honey.
  • Squeeze over the juice from the rest of the lemon and put a couple spoonfuls of water around the edge of the dish.
  • Return to the oven for another 10 minutes, or until the chicken is golden and cooked through.

  1. Rather a disappointment. The chicken was moist but didn't get "sticky". With all the liquid in the baking dish, the chicken was more braised than broiled. I'm assuming the recipe called for broiling when it said to preheat the oven grill. Could be just a translation problem.

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
