- 2041.16 g spinach, washed and dried thoroughly
- 6 hard-cooked eggs, sliced
- 1.23 ml salt
- 2.46 ml ground pepper
- 12 slice bacon, strips chopped and fried crisp
- 177.44 ml bacon drippings
- 118.29 ml malt vinegar
- 59.14 ml lemon juice
- 19.71 ml sugar
- 4.92 ml Worcestershire sauce
- 42.52 g brandy (100 proof)
directions
- Tear spinach into bite-sized pieces and place in a large salad bowl.
- Add egg slices, salt and pepper.
- Mix remaining ingredients except brandy in small saucepan and heat until very hot.
- Heat brandy briefly, add to saucepan and ignite.
- Pour flaming dressing over spinach and toss gently but thoroughly.
- Serve on warm salad plates.
