Spinach-Potato Bake

  • Preheat oven to 400°F.
  • Spray deep 9-inch casserole with nonstick cooking spray.
  • Brown beef 6 to 8 minutes in large skillet over medium-high heat, stirring to break up meat.
  • Drain fat; add onion, mushrooms and garlic, cooking until tender.
  • Stir in spinach and nutmeg; cover and cook until heated through, stirring occasionally.
  • Combine potatoes, sour cream and milk.
  • Add beef to mixture; season with salt and pepper.
  • Spoon into prepared casserole; sprinkle with cheese.
  • Bake 15 to 20 minutes or until slightly puffed and cheese is melted.

  1. I've made this twice. Both times followed the recipe almost exactly (added a full cup of mushrooms instead of 1/2) It's delicious. Both teen boys loved it too. Even the eldest who usually pushes ground hamburger off to the side!
     
  2. Wow! I am totally blown away at how good this was. I used lean ground turkey (which made it a little dry but still GREAT) and non-fat sour cream and milk. I also did not use mushrooms, as we don't like them. Instead of mixing, I layered the meat and potatoes. This was so easy and just delicious! Thank you!

I am lucky enough to be "living the good life". I have the most wonderful husband and two terrific teenage daughters. We reside in Central Pennsylvania where we have the luck of having four full seasons. Between my husband and myself, we have two full time jobs, three businesses and one part time job. We are very busy, but try to take it easy when we can and enjoy the wonderful life we have been blessed with. Future plans include moving to an inherited 45 acre farm in a beautiful valley surrounded by mountains. This will occur if and when our DD's leave the nest. We love to travel and have enjoyed seeing all of North America and a large portion of the United States together. Since discovering Zaar, I have to say my life has become more flavorful! I have learned that it's easier than I thought to have an organized, well-planned and yet creative and fun kitchen! I love the features of Zaar, but especially enjoy the people. I have become addicted to the forums and now love taking photos of the food I prepare. I am officially a Zaar junky!
