Spinach Pie Super Simple

  • In a bowl mix flour with 1 tsp salt and 1/4 cup olive oil.
  • mix well with a fork.
  • add 1 cup of water slowly.
  • when dough forms a smooth ball dust with flour cover and let sit for 20 minutes.
  • after 20 mins separate dough into 2 halves and roll out on a well floured surface.
  • In a medium sized pot add 1/4 olive oil chopped onion , chopped garlic and cook till onion is clear.
  • add spinach ,salt and pepper stir well , cover and let cook till spinach is tender.
  • add 1/2 cup parmesan cheese stir well and remove from heat.
  • take one half of the rolled out filo dough and place in a pie pan making sure to leave 1/2 inch of extra dough overhanging ( you will need to fold this over with the top layer to seal your pie).
  • pour the spinach filling in and spread evenly.
  • take the other layer of filo dough and lay it over the filling.
  • take both edges of dough pinch together and roll in towards the center at a slight angle to seal.
  • lightly brush the top with water.
  • sprinkle with sesame seeds.
  • pierce the top with a fork.
  • bake at 350 for 15 mins or until golden brown on top.
