This is my mom's recipe and one of the most popular things at holiday parties. Not as healthy as it sounds but definitely good, even if you don't like spinach!

  1. Combine all ingredients in a large bowl Roll into 2 inch balls with your hands Bake at 400 degrees for 10-15 minute.

I make these with less than 1/2 cup butter and 6 eggs, they hold together nicely!

These were okay - but a tad greasy for our preferences. I think perhaps adding an egg and reducing the butter would be helpful. I'll try that next time. Thanks!
