This is my mom's recipe and one of the most popular things at holiday parties. Not as healthy as it sounds but definitely good, even if you don't like spinach!
- 2 cups pepperidge farm seasoned stuffing mix
- 3⁄4 cup butter, melted
- 2 (10 ounce) packages frozen chopped spinach, thawed and well drained
- 1 cup parmesan cheese
- 1 tablespoon chopped garlic
- 1 onion, chopped
- 1 egg
- Combine all ingredients in a large bowl Roll into 2 inch balls with your hands Bake at 400 degrees for 10-15 minute.
- until lightly browned.
I made these and they were Delicious!!!! Everyone enjoyed them! I added shreaded mozarella cheese! Great recipe!
I make these with less than 1/2 cup butter and 6 eggs, they hold together nicely!
These were okay - but a tad greasy for our preferences. I think perhaps adding an egg and reducing the butter would be helpful. I'll try that next time. Thanks!
