- 566.99 g package Simply Potatoes® Shredded Hash Browns
- 29.58 ml vegetable oil
- 118.29 ml cooked corn kernel
- 118.29 ml canned black beans, rinsed and drained
- 1 green onion, minced
- 59.14 ml snipped sun-dried tomato, without oil
- 59.14 ml roasted red pepper, chopped
- 29.58 ml cilantro, snipped
- 118.29 ml shredded monterey jack cheese
- 78.78 ml green chili salsa, plus more for passing
- 78.78 ml crisp cooked crumbled bacon
- 6 warm burrito size spinach flavored tortillas (10 inches in diameter)
directions
- In a large non-stick skillet over medium high heat cook the hash browns in the heated oil according to package directions.
- Stir in the rest of the ingredients except tortillas; mix well.
- Divide equally among the tortillas then roll up tightly.
- Cut each wrap on the diagonal into 3 pieces and serve, passing additional salsa.
