Southwest Stuffed Chicken Breasts

  • Pound chicken breasts out flat.
  • Place a slice of Provolone cheese and a green chili in the center of the breast.
  • Roll up the breast and insert toothpicks through them to hold them shut.
  • Dip in egg and roll in the breadcrumbs.
  • Pre-heat oven to 350 degrees.
  • Bake on 350 degrees for approximately 20-25 minute.

  1. My family and I enjoyed this very much, however I did tweak it just a bit. I used (real) PepperJack Cheese instead of provolone to add a little more spice, and I added some salt and pepper to the breadcrumbs. My husband really liked it and he is a very picky eater.
     
  2. Since this had chili in it, I had high hopes for it. The best part of the dinner was the spanish rice -- the chicken was not great.
