- 1⁄3 cup clear Italian salad dressing
- 7 potatoes, boiled, peeled and sliced
- 3⁄4 cup sliced celery
- 1⁄2 cup green onions with top, sliced
- 4 hard-boiled eggs
- 1 cup mayonnaise
- 1 teaspoon celery seed
- 1⁄2 cup sour cream
- 1 1⁄2 teaspoons horseradish mustard
directions
- Pour dressing over prepared potatoes and chill 2 hours.
- Add celery, onion and chopped egg whties. Add sieved egg yokes.
- Blend together mayonnaise, sour cream and celery seed.
- Fold inot potato mixture.
- Add salt to taste.
- Chill 2 hours before serving.

This is a really pretty potato salad & would be a nice change at a summer BBQ. I liked the creaminess & it held very well. I didn't use much of the specified mayo at all, just 2T. I had plenty of dressing for the salad without it. Maybe my potaoes were smaller? I also used dry horeradish powder in with dijon mustard as a sub. It had a nice bite, but I can't say for sure my changes duplicate the recipe exactly. Made for Spring Pick A Chef '09!
