  1. Preheat oven to 375°F.
  2. Beat together the molasses, margarine, and brown sugar.
  3. Beat in the applesauce the egg white, and grated ginger root.
  4. Mix the dry ingredients evenly.
  5. Cut the crystallized ginger into smaller pieces, and add as many as you want to the dry mixture.
  6. Stir everything together, being careful not to overstir.
  7. Generously coat each ball of dough with white sugar.
  8. Bake for 8-12 minutes.
