I got this recipe out of a periodical I receive every month. I thought I would try it. It was very good. Some of my family did not care for the roasted onions, some did. I happened to like them. They were good by themselves.

  1. In your slow cooker add, chicken beer and BBQ sauce.
  2. Set on low for 6 hours our high for 4 hours.
  3. When chicken is done, you should be able to shred it easily with a fork,.
  4. Stir scallions into your cooked chicken.
  5. For the Balsamic Onions and Peppers:.
  6. whisk the balsamic vinegar, olive oil, honey and garlic together.
  7. Place sliced onions and peppers in the bottom of a large baking dish.
  8. Drizzle dressing over top and bake at 350 degrees for 20 minutes.
  9. Stir and toss and return to oven for another 15 minutes or.
  10. until they are caramelized and browning a bit on the edges.
  11. Place a heaping portion of pulled chicken on top of your rolls.
  12. and top with a scoop of onions and peppers.
