Here is a light way to have your cake and eat it too.


  1. Juice 3 grapefruit to make 1 3/4 cups juice.
  2. Set aside.
  3. With spoon, scrape membrane out of shells; reserve shells.
  4. Peel and remove sections from remaining grapefruit.
  5. Reserve from garnish.
  6. In small saucepan, soften gelatin in cold water; then dissolve over low heat.
  7. Set aside.
  8. Mix cheese, sugar and grapefruit juice until smooth.
  9. On low, add dissolved gelatin and mix well.
  10. Pour mixture into reserved grapefruit shells.
  11. Chill until firm.
  12. Before serving, garnish with reserved grapefruit sections.
