Simple Low-Fat Crêpes

Only 1 Tbsp of butter for 10 crêpes!

Directions

  1. Mix all ingredients together into batter. Use a blender if you wish.
  2. Spray crêpe pan or any flat-bottom pan with cooking spray.
  3. Add batter to pan and swirl to coat (use just enough to coat entire pan). Cook until bubbles are visible, then flip. Cook until crêpe slides easily off the pan, then remove from heat. Repeat until all batter is used up (no need to spray pan again). Makes roughly 10 crêpes. Freeze well, can be reheated in microwave on high for 1 minute.
  4. Fill crêpes with whatever you wish! Berries and custard, nutella and banana, ham and cheese, chicken and hollandaise sauce -- delicious!
