- 1 1⁄2 cups whole wheat pastry flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 3 large bananas, mashed
- 1 large egg
- 3⁄4 cup brown sugar
- 1⁄3 cup unsweetened applesauce
- 1 1⁄2 teaspoons almond extract
directions
- preheat oven to 350 degrees and spray muffin tins with nonstick spray.
- Place all dry ingredients in a bowl and mix. Combine remaining ingredients and add to dry mixture folding together with a spatula until just combined. Watch the muffins carefully and remove from oven when still slightly moist in the middle.
