  • Heat oil in skillet, add potatoes and green pepper, cook for 5 minutes or until brown.
  • Mix eggs and milk.
  • Pour mixture evenly over potatoes and sprinkle with bacon.
  • Cover.
  • Reduce heat to low.
  • Cook 8 minutes.
  • Sprinkle with cheese and cover.
  • Heat until cheese is melted.
  • Cut into wedges.

  1. We enjoyed this for breakfast today. I used peppers and onions and added a good bit of pepper. This took a lot longer then 8 minutes to get the eggs done the way we like them. I ended up cutting it up and flipping it so it would get done to our liking. We all liked this.

Whoo hoo! I finally graduated from college in June. I love to cook and experiment with new recipes! I also like to read, when I can, and ski. My favorite cookbook is anything by Racheal Ray. She came down to Ashland for her $40 a day show. That was exciting.
