ingredients
- 3 tablespoons vegetable oil
- 2 cups frozen shredded hash browns
- 1⁄2 green pepper, chopped
- 10 slices bacon, cooked
- 6 beaten eggs
- 2 tablespoons milk or 2 tablespoons water
- 1⁄2 cup shredded sharp cheddar cheese
directions
- Heat oil in skillet, add potatoes and green pepper, cook for 5 minutes or until brown.
- Mix eggs and milk.
- Pour mixture evenly over potatoes and sprinkle with bacon.
- Cover.
- Reduce heat to low.
- Cook 8 minutes.
- Sprinkle with cheese and cover.
- Heat until cheese is melted.
- Cut into wedges.
