We enjoyed this for breakfast today. I used peppers and onions and added a good bit of pepper. This took a lot longer then 8 minutes to get the eggs done the way we like them. I ended up cutting it up and flipping it so it would get done to our liking. We all liked this.

  1. Heat oil in skillet, add potatoes and green pepper, cook for 5 minutes or until brown.
  2. Mix eggs and milk.
  3. Pour mixture evenly over potatoes and sprinkle with bacon.
  4. Cover.
  5. Reduce heat to low.
  6. Cook 8 minutes.
  7. Sprinkle with cheese and cover.
  8. Heat until cheese is melted.
  9. Cut into wedges.
