Shirred Eggs

"Lost Recipes by Marion Cunningham. She also suggest scattering ham or bacon the the bottom of the cups before putting in the egg. Use small ramekins, pyrex dishes, or muffin tins to bake the eggs."

  • Preheat oven to 325°F.
  • Melt butter in a small pan. Put 1 tsp in to each baking cup and swirl to coat the bottom and sides. Crack each egg into a buttered cup and sprinkle with salt and pepper.
  • Bake for 6 minutes, or until the eggs are almost set. Sprinkle on the grated cheese and bake 2-3 more minutes. Tip and tilt cup, if egg white is set and opaque, it is done. Remove eggs from cups with a small spoon and serve.
