  • Mix together all ingredients in a bowl or large jar (nothing metal).
  • Set uncovered (or cover with a double thickness of cheese cloth) in a warm place (about 80 degrees) overnight. Mixture will smell sour and be full of bubbles.
  • Keep your starter in the refrigerator in a glass jar covered with a piece of plastic wrap before screwing on the metal cap or a plastic container.
  • After use, replenish with a proportional amount of flour and water.
