  • Cook macaroni and drain.
  • All the rest of ingredients, except for margarine and cracker crumbs.
  • Put in greased 13 x 9 pan(I think).
  • Melt margarine and add cracker crumbs.
  • Put on top of casserole.
  • Bake at 350°F for 1 hour.

  1. Very savory! I sautéed the onions, green peppers and mushrooms before mixing in. I improvised a bit and added steamed classic mixed veggies (green peas, cut green beans, carrots, corn). I also substituted in vegan cheese and non-dairy butter to make the recipe dairy free.
     
  2. Wow, was this surprisingly yummy! I made a few variations, but basically the same ingredients. I cooked my onion and peppers in the margarine since I didn't have an hour to bake it. Left out the mushrooms as my hubby doesn't care for them. And I topped with extra cheddar instead of the cracker crumbs. Totally tasty and will definitely add this to our dinner rotation!
     
  3. My toddler loves corn so I was hoping I could get her to eat this, sadly no. This was a nice simple one dish meal to serve alongside a meat main. I topped with breadcrumbs & left off the butter. I did find that the capsicum stayed crunchy though so it may need to be sauteed first or could be left out.
     
  4. This casserole was really good! My kids don't like green pepper so I subbed green peas, otherwise made as specified. The cheese and the margarine/cracker topping were a great addition to this tasty dish - I will definitely make this again!
