Sauteed Zucchini With Nutmeg

"A unique side dish for most any meal. You can either use a food processor to shred the zucchini, or use a box grater, like I did."

  • Melt the butter in a large skillet over medium-high heat, then add the shredded zucchini.
  • Sautee the zucchini, stirring frequently,until zucchini is cooked through but not too mushy.
  • Lower heat, add the nutmeg, salt and pepper (Nutmeg is a very strong spice and you really don't need any more than the 1/8 teaspoon).
  • Stir the spices into the zucchini and serve.

  1. This was a huge hit at our house, we had no leftovers, and a couple of people were disappointed that we ran out so soon. Simple and easy to make , except for the shredding, if I ever get a food processor then it should be a breeze.

I have taught myself how to cook since college and my advice about cooking is to keep practicing, try all sorts of cookbooks and different recipes, and don't be afraid to fail--you'll always learn something from it (of course, I'm a teacher so it makes sense that I believe that). I moved to Dallas 3 years ago and I love the ready availability of genuine Mexican food in the area. It's the one kind of cuisine I've never tried to make myself because the restaurants in my area are so good. I love movies, music from the 70's and 80's, animals, and beautiful weather.
