I was making Chicken With Mushroom Sauce for dinner but 2 of the daughters do not like mushrooms so I made theirs without. They gobbled these up and asked me to post the recipe....so here it is.
- 4 (4 ounce) boneless skinless chicken breast halves
- 2 tablespoons oil
- salt & pepper, to taste
- Flatten chicken to 1/4-in. thickness. Season with salt and pepper.
- In a large nonstick skillet, cook chicken in oil over medium heat for 5-6 minutes on each side or until juices run clear. Remove and keep warm.
simple and acceptable by those grandkids who don't like anyything fancy!!
This is a simple, basic recipe for juicy, flavorful chicken. Sometimes we get so wrapped up in complicated recipes that we forget that simple is just as good if not better. A great way to cook chicken for casseroles, salads, or pot pies.
