Sausage Hash Browns Casserole

This is a recipe that my boss brings into work all the time. It's a big hit with everyone in the office.

We tried this recipe to use up stuff in our fridge and it was great! I only had half a bag of hash browns so I halved the recipe and it was plenty for the two of us with leftovers.

  1. In skillet, cook the sausage until brown. Drain well.
  2. In large mixing bowl, combine the cheese, chicken soup, sour cream, French onion dip,salt and pepper.
  3. Fold in thawed hash browns. Mix well.
  4. Spread 1/2 of the hash brown mixture in bottom of 9x13" greased pan (or you can use PAM).
  5. Spread 1/2 of the browned sausage over the hash browns.
  6. Repeat.
  7. Bake @ 350 approximately 1 hour until golden brown.
  8. (I cover with foil the first 1/2 hour to avoid over cooking the sausage on top.).
