Salmon with Avocado Mayonnaise

  • In a small bowl, add the first 6 ingredients; stir to combine, then set aside.
  • Rinse the salmon fillets and pat dry.
  • Put the salmon, skin side down in a broiler pan.
  • Brush each fillet with 1 teaspoon oil.
  • Sprinkle the fillets evenly with the brown sugar mixture.
  • Broil about 5 inches from heat source for 1 1/2 to 2 minutes or until brown sugar mixture begins to carmelize.
  • Lower oven temperature to 425 degrees and bake 8-12 minutes or until fish flakes.
  • In a small bowl, mash the avocado until mostly smooth.
  • Add in the lemon juice; stir to combine.
  • Whisk in the mayonnaise until smooth.
  • Cover and chill until ready to serve.
  • Serve with the salmon fillets.

  1. Delicious and a bit spicy. I used lime juice instead of lemon juice for a more Mexican flavor. Had way too much avocado mixture left over, but I can use it for dip.
     
  2. I thought this recipe was great. The brown sugar mixture was delicious and very flavorful. It was such a cinch to make. I didn't feel like going to the store to buy avocadoes, so I skipped that part all together. The salmon alone was fantastic. I will make this again and again. Thank you.
     
  3. i wasn't too enthusiastic about this, but my husband quite liked it. the flavors seemed rather "confused" for me - i didn't find that i liked matching sugar with cumin and chili powder, and the avo-mayo further confounded the flavors, which i thought was neither here nor there. i am adventurous and like discovering new tastes, so thanks for that, but i think i will drop this one from the cookbook.
