Salmon with Avocado Mayonnaise

- 1 tablespoon brown sugar
- 2 teaspoons paprika
- 1 1⁄2 teaspoons salt
- 1⁄2 teaspoon ground cumin
- 1⁄2 teaspoon chili powder
- 1⁄2 teaspoon black pepper
- 6 (8 ounce) salmon fillets
- 2 tablespoons olive oil
- 1 ripe avocado, peeled and cubed
- 2 teaspoons fresh lemon juice
- 5 tablespoons mayonnaise
directions
- In a small bowl, add the first 6 ingredients; stir to combine, then set aside.
- Rinse the salmon fillets and pat dry.
- Put the salmon, skin side down in a broiler pan.
- Brush each fillet with 1 teaspoon oil.
- Sprinkle the fillets evenly with the brown sugar mixture.
- Broil about 5 inches from heat source for 1 1/2 to 2 minutes or until brown sugar mixture begins to carmelize.
- Lower oven temperature to 425 degrees and bake 8-12 minutes or until fish flakes.
- In a small bowl, mash the avocado until mostly smooth.
- Add in the lemon juice; stir to combine.
- Whisk in the mayonnaise until smooth.
- Cover and chill until ready to serve.
- Serve with the salmon fillets.

i wasn't too enthusiastic about this, but my husband quite liked it. the flavors seemed rather "confused" for me - i didn't find that i liked matching sugar with cumin and chili powder, and the avo-mayo further confounded the flavors, which i thought was neither here nor there. i am adventurous and like discovering new tastes, so thanks for that, but i think i will drop this one from the cookbook.
