Salmon Fajitas With Mango Salsa

A recipe that looks so yummy. Taken in the issue of Mai 2006 of Coup de Pouce. Another one I have not tried yet.

  1. In a bowl, mix mint, mayonnaise, lime juice, ginger, green onion, salt and pepper.
  2. Add salmon and flake well with a fork .
  3. Spread lettuce on tortillas.
  4. Spread mixture of salmon on center of each tortillas.
  5. Fold the sides of the tortillas on the mixture and roll.
  6. When ready to serve, cut the tortillas in two if wanted and garnish with the mango salsa.
  7. Mango salsa : In a bowl, mix chopped mangoes, lime zest, lime juice, green onion, sugar, salt and cayenne pepper.

They are delicious. My family loved the salmon pitas with mango. Yummy!!!

While this didn't knock MY socks off, DH & DS LOVED it! I think it's all personal preference on my part, as the recipe is really very good. We used fresh salmon that I covered with lemon slices, pats of butter & fresh dill, then baked. I used the mangoes, fresh mint, ginger, lemon & lime. A really nice summer meal. Simply delicious. I used grilled fresh salmon and warm home made flour tortillas. Everybody love the tacos. Thank you.
